1/4 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon turmeric

1/4 teaspoon chili powder

1/2 teaspoon paprika

8 bone-in, skin-on chicken thighs

Directions

  1. Pat the chicken thighs dry with paper towels to remove excess moisture, which will help achieve a better sear and crispier skin when grilling.

  2. In a small bowl, combine the salt, black pepper, garlic powder, onion powder, dried oregano, turmeric, chili powder, and paprika to create a unified dry spice blend.

  3. Generously rub the spice mixture all over each chicken thigh, making sure to coat both the skin side and underside evenly for balanced flavor.

  4. Preheat your grill to medium-high heat (around 375–400°F), allowing it to reach full temperature before placing the chicken on the grates.

  5. Arrange the chicken thighs skin-side down on the grill and cook undisturbed for 6–8 minutes until the skin is golden brown and releases easily from the grates.

  6. Flip the thighs to the bone side and continue grilling for another 6–8 minutes, until the internal temperature reaches 165°F at the thickest part of the thigh without touching bone.

  7. Transfer the cooked chicken thighs to a serving platter and let rest for 5 minutes before serving, allowing the juices to redistribute.
