4 eggs

4 tablespoons oil for cooking

1 large onion, diced

2 teaspoons ground cumin

1 teaspoon chili powder

2 teaspoons ground black pepper

Salt to taste

Directions

  1. Heat the oil in a large skillet or wok over medium-high heat. Once hot, add the diced onion and sauté for 3-4 minutes until golden and soft, stirring occasionally.

  2. While the onion cooks, crack the eggs into a bowl and whisk together until well combined. Set aside.

  3. Sprinkle the ground cumin, chili powder, and black pepper over the cooked onion and stir well to coat evenly. Cook for 30 seconds until fragrant.

  4. Pour the whisked eggs into the skillet with the spiced onion. Gently scramble and fold with a spatula, breaking up the eggs as they cook, for about 3-4 minutes until fully cooked through (eggs should reach 160°F internal temperature or show no liquid egg remaining).

  5. Taste the mixture and add salt as needed. Divide between two plates and serve immediately.
