Ingredients

1 cup cup boiling water

1 Earl Grey teabag

1 sprig full sprig fresh oregano

1 cup cup sugar

¾ ounces ounces Oregano Earl Grey syrup

1½ ounces ounces Sheep Dip blended malt Scotch whisky

¾ ounces ounces Metaxa Greek liqueur

¾ ounces ounces fresh lemon juice

dash dash fresh grapefruit juice

dash dash Creole bitters

2 twists twists fresh grapefruit peel

Directions

  1. Prepare the Oregano Earl Grey Syrup: Pour the boiling water over the Earl Grey teabag in a small bowl or cup. Allow it to steep for 3 to 4 minutes until the tea is fully infused.

  2. Remove the teabag and add the fresh oregano sprig to the hot tea. Let it infuse for 1 to 2 minutes to release the oregano's herbal notes.

  3. Strain the tea mixture through a fine mesh strainer into a saucepan, discarding the oregano sprig. Stir in the sugar until completely dissolved.

  4. Allow the syrup to cool completely to room temperature, then transfer to a clean bottle or container for storage. This syrup can be made ahead and kept refrigerated for several days.

  5. To prepare the cocktail, fill a mixing glass with ice. Pour in the Oregano Earl Grey syrup, Sheep Dip Scotch whisky, and Metaxa.

  6. Add the fresh lemon juice and a dash of fresh grapefruit juice to the mixing glass.

  7. Add a dash of Creole bitters to the mixture.

  8. Stir all ingredients together in the mixing glass for about 15 to 20 seconds until well chilled and combined.

  9. Strain the cocktail into a coupe glass or serving glass filled with fresh ice.

  10. Express the oils from the grapefruit peels over the drink by twisting them over the surface, then drop them into the glass as garnish and serve immediately.
