Ingredients
3 tablespoons neutral oil, divided
1 yellow onion, diced
4 cloves garlic, minced
1 1-inch piece fresh ginger, minced
1 large carrot, shredded
½ head green cabbage, shredded
2 cups cooked brown rice, chilled
Salt and black pepper to taste
Lime wedges for serving
Soy sauce for serving
Directions
Heat 1 tablespoon of oil in a large nonstick skillet over medium-high heat.
Add the diced onion, minced garlic, and minced ginger to the skillet. Stir-fry until the mixture becomes soft and fragrant, about 2 minutes.
Pour another 1 tablespoon of oil into the pan and add the shredded carrot and cabbage.
Continue stir-frying the vegetables until they are tender-crisp, about 2–3 minutes. Season generously with salt and black pepper.
Add the chilled cooked brown rice to the skillet along with the remaining 1 tablespoon of oil. Break up any clumps and stir-fry until the rice is heated through and lightly browned in spots, about 2 minutes. Taste and adjust seasoning with salt and pepper as needed.
Divide the fried rice among serving bowls. Serve immediately with lime wedges and soy sauce on the side.
