Directions
Preheat the oven to 350°F. Lightly grease a 13 x 9 inch baking pan with butter or oil.
In a large mixing bowl, combine the cottage cheese, granulated sugar, eggs, and vanilla extract. Using a hand mixer set to medium-high speed, beat the mixture for 2-3 minutes until it becomes light, fluffy, and well blended.
Pour the cottage cheese mixture evenly into the prepared baking pan. Bake at 350°F for 50-60 minutes, until the edges are lightly browned and the center is nearly set but still slightly jiggly—this indicates the custard-like texture is properly cooked. The internal temperature should reach 160°F to ensure the eggs are safely cooked.
Remove from the oven and allow the syrnyk to cool to room temperature on a wire rack. Once cooled, transfer to the refrigerator and chill for at least 2 hours before serving.
