Ingredients
3 pounds medium lemons (10 to 14 lemons)
14 ounces granulated sugar
24 ounces cold sparkling water
9 fluid ounces chilled beer, such as pilsner
6 fluid ounces sparkling lemonade
Directions
Wash the lemons thoroughly under cool running water. Slice them in half and use a lemon juicer or citrus press to extract the juice. Strain the juice through a fine-mesh sieve to remove any pulp and seeds. You should have approximately 2 cups of fresh lemon juice.
In a large pitcher, combine the freshly squeezed lemon juice with the granulated sugar. Stir well for 1 to 2 minutes until the sugar is completely dissolved and the mixture is smooth.
Add the 24 ounces of cold sparkling water to the lemon-sugar mixture. Stir gently to combine, being careful not to deflate the carbonation.
Pour in the chilled beer slowly, stirring very gently to maintain the bubbles and create a light, effervescent drink.
Add the 6 fluid ounces of sparkling lemonade and stir gently one final time to blend all the ingredients.
Fill six glasses with ice cubes. Pour the cocktail evenly into each glass and serve immediately while the carbonation is at its peak. Optionally, garnish with fresh lemon slices or a sprig of fresh mint.
