Ingredients
2 tablespoons extra-virgin olive oil
1 pound medium shrimp, thawed if frozen, peeled and deveined
3 cloves garlic, minced
8 ounces cream cheese, softened
1/4 cup mayonnaise
3/4 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped, plus more for garnish
Salt and black pepper to taste
Directions
Preheat your oven to 350°F. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant, then add the shrimp. Season with salt and pepper, and cook for 3 to 4 minutes, stirring occasionally, until the shrimp are pink and opaque throughout. Transfer to a cutting board and let cool slightly, then coarsely chop the shrimp into bite-sized pieces.
In a large bowl, combine the softened cream cheese, mayonnaise, shredded mozzarella, grated Parmesan, and the 2 tablespoons of fresh chopped parsley. Fold in the chopped shrimp. Season the mixture to taste with salt and pepper, adjusting as needed.
Transfer the shrimp mixture to a small baking dish, spreading it evenly. Bake at 350°F for 25 minutes, until the top is golden brown and the dip is bubbly around the edges.
Remove from the oven and let cool for 2 to 3 minutes. Garnish generously with additional fresh parsley. Serve warm with your choice of crackers, pita chips, or vegetable crudités.
