Ingredients

2 tablespoons chili powder

1 tablespoon mild honey

1 tablespoon fresh lime juice

1 teaspoon salt

1/2 teaspoon black pepper

4 whole chicken legs (2 pounds), thighs and drumsticks separated

Cooking oil spray or oil for greasing the rack

Directions

  1. Position the oven rack in the upper third of the oven and preheat to 425°F. Line a 15-by-10-inch shallow baking pan with foil, then lightly oil a large metal rack and place it in the prepared pan.

  2. In a large bowl, whisk together the chili powder, honey, lime juice, salt, and black pepper until well combined.

  3. Add the chicken legs and thighs to the bowl and toss to coat all pieces evenly with the spice mixture.

  4. Arrange the coated chicken pieces on the oiled rack in a single layer.

  5. Roast for 15 to 18 minutes, then turn the chicken pieces over.

  6. Continue roasting for another 15 to 17 minutes until the chicken reaches an internal temperature of 165°F at the thickest part of the thigh, not touching bone. The skin should be golden and crispy.

  7. Remove from the oven and allow to rest for a few minutes before serving.
