1 beef tenderloin (3½ pounds), tied with kitchen twine at 2-inch intervals
Coarse salt
Freshly ground black pepper
4 to 6 tablespoons unsalted butter, softened
2 tablespoons stone-ground mustard
1 tablespoon Dijon mustard
Directions
Remove the beef tenderloin from refrigeration 30 minutes before cooking to allow it to reach room temperature. Preheat the oven to 425°F.
Pat the tenderloin dry with paper towels. Season generously all over with coarse salt and freshly ground black pepper.
In a small bowl, combine the softened butter with the stone-ground mustard and Dijon mustard, stirring until well blended.
Rub the mustard butter mixture evenly over the entire surface of the beef tenderloin, coating all sides.
Place the prepared tenderloin on a roasting pan. Roast in the preheated oven for 35 to 45 minutes, until an instant-read meat thermometer inserted into the thickest part reaches 145°F for medium-rare doneness.
Remove from the oven and let rest for 10 minutes before slicing. This allows the juices to redistribute and ensures tender, juicy meat.
Slice between the twine and transfer to a serving platter. Serve warm.
