Grilled Caprese Stuffed Mushrooms

Ingredients
8 large cremini mushrooms, brushed clean with stems removed
2 mozzarella medallions, cut into 8 pieces total
1/4 cup fresh diced tomatoes
8 fresh basil leaves, chopped
3 tablespoons extra virgin olive oil, divided
salt and freshly ground black pepper to taste
Directions
Preheat your grill to 425°F.
While the grill heats, carefully place one piece of mozzarella into the cavity of each mushroom cap.
Top the mozzarella in each mushroom with approximately 1/2 teaspoon of the diced tomatoes.
Lightly brush the top and outside of each stuffed mushroom with 1 tablespoon of extra virgin olive oil.
Place the mushrooms directly on the grill grate with the stuffed side up. Grill for about 5 minutes until the mushroom caps become tender and the mozzarella melts completely.
Carefully transfer the grilled mushrooms to a serving platter.
Sprinkle the fresh chopped basil evenly over each mushroom.
Drizzle with the remaining 2 tablespoons of extra virgin olive oil and season with salt and pepper to taste.
Serve the mushrooms immediately while they are still warm.
