Green Bean and Rice Casserole

Ingredients
1/2 cup onion, chopped
2 teaspoons vegetable oil
1/2 cup uncooked rice
1 can (15 ounces) reduced-sodium green beans, drained
1 can (15 ounces) diced tomatoes with no salt added
1 cup water
Directions
Heat the vegetable oil in a medium saucepan over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion becomes translucent and just begins to develop light golden color, about 3-4 minutes.
Stir in the uncooked rice, coating it well with the oil. Toast the rice for 1-2 minutes, stirring frequently, until it becomes fragrant and very lightly golden.
Add the drained green beans, diced tomatoes (with their liquid), and water to the pan. Stir to combine all ingredients.
Bring the mixture to a boil over medium-high heat, then immediately reduce the heat to low. Cover the pan with a lid.
Simmer covered for 15-18 minutes, until the rice is tender and has absorbed most of the liquid. Remove from heat and let stand covered for 2 minutes before serving.
