Ingredients
2 boneless, skinless chicken breasts
1/2 teaspoon ground black pepper
2 tablespoons olive oil
1/4 cup applesauce
1/4 cup barbecue sauce
1 tablespoon brown sugar
1/2 teaspoon chili powder
1/4 teaspoon ground nutmeg
Directions
Rinse the chicken breasts under cool running water and pat them dry thoroughly with paper towels or a clean kitchen towel.
Carefully slice each chicken breast horizontally to create two thinner cutlets of roughly equal thickness.
Season both sides of the chicken slices evenly with the ground black pepper.
Heat the olive oil in a grill pan or skillet over medium-high heat until it shimmers and is hot enough to cook the chicken.
Place the seasoned chicken slices in the hot pan and cook for 4-5 minutes on the first side until golden brown, then flip and cook the other side for another 4-5 minutes until golden. The chicken should reach an internal temperature of 165°F.
In a small bowl, whisk together the applesauce, barbecue sauce, brown sugar, chili powder, and ground nutmeg until well combined.
Pour the applesauce mixture over the browned chicken in the pan and stir gently to coat all pieces. Reduce heat to medium and simmer for 8-10 minutes, stirring occasionally, until the sauce thickens slightly and the flavors blend together.
Transfer the chicken to a serving plate and drizzle with any remaining sauce from the pan. Serve immediately while hot.
