Ingredients
1 boneless, skinless chicken breast
2 teaspoons olive oil, divided
1 heaping teaspoon smoked paprika
1 ripe avocado, sliced or cubed
2 cups fresh mixed salad greens
Salt and black pepper to taste
Directions
Preheat your grill to medium heat. Pat the chicken breast dry with paper towels, then brush both sides evenly with 1 teaspoon of olive oil. Season generously with the smoked paprika on all sides.
Place the seasoned chicken breast on the preheated grill. Cook for 4 to 5 minutes on the first side until you see light char marks forming. Flip the chicken and cook for an additional 4 to 5 minutes on the second side until the internal temperature reaches 165°F and the meat is no longer pink.
While the chicken cooks, combine the mixed salad greens and avocado in a bowl. Drizzle with the remaining 1 teaspoon of olive oil and season with salt and black pepper to your preference. Toss gently to combine.
Remove the cooked chicken from the grill and let it rest for 2 minutes. Slice the chicken breast into thick strips and arrange on a plate alongside the avocado salad. Serve immediately.
Comments
The 15-minute time is honest if you start with a hot grill, but assumes the chicken is pounded thin—most home cooks will hit 20 minutes total. A single chicken breast and avocado runs $4.50–$5.50 depending on where you shop (Walmart or Harris Teeter for the breast, ALDI for avocado savings), making this a decent-value solo meal with zero special stops. Greens, oil, and smoked paprika are staples at any Charlotte chain. The real caveat is that this is strictly same-night eating: grilled chicken and avocado don't reheat well, so plan this for a night when you're eating immediately, not meal-prepping.
