A succulent grilled lobster featuring a whole 1½-pound crustacean briefly parboiled, then split and seasoned with bold Creole spices. The lobster is grilled on both sides until charred and finished in a hot oven for a smoky, tender result that showcases the natural sweetness of the meat.

Ingredients
1 (1½ pound) whole live lobster
2 teaspoons Creole seasoning
Directions
Preheat your oven to 400°F and prepare your grill for high-heat cooking.
Fill a large pot with water and bring it to a rolling boil. Carefully lower the lobster head-first into the boiling water. Cook for 2 minutes to begin the cooking process.
Using tongs, remove the lobster from the boiling water and immediately place it into an ice bath to halt the cooking and cool it enough to handle safely.
Once cooled, lay the lobster on a cutting board and carefully split it lengthwise down the back, opening it like a butterfly. Keep the shell intact.
Sprinkle the Creole seasoning evenly over the exposed lobster meat on both halves.
Place the lobster belly-side down on the hot grill and cook for 4 minutes until you see grill marks and slight charring.
Flip the lobster over so the meat side faces the grill and cook for another 4 minutes.
Transfer the grilled lobster to a baking sheet and place it in the preheated 400°F oven for 7 minutes to finish cooking through and develop deeper flavor.
Remove from the oven and serve immediately while hot and succulent.
