½ cup shaved carrots
2 tablespoons Kimchi Miso Dressing
3-4 ounces cooked snapper, flaked
Directions
Arrange the trimmed watercress and butter lettuce in a bowl or on a plate.

Comments
Watercress and butter lettuce are reliable at Harris Teeter and Food Lion, but fresh snapper requires a trip to a seafood counter—most Walmart and ALDI locations won't have it, and you'll need Publix or a dedicated fish market for quality. The kimchi miso dressing isn't a shelf-stable pantry item; unless you make it from scratch (adding real prep time beyond the stated 25 minutes), you're hunting for bottled miso, gochujang, and kimchi across multiple stops. At $14–18 for a single serving with fresh snapper, this skews expensive for a weeknight. The single-serving format is a real limitation if you're cooking for a family, and while it's a same-night dish, reheating snapper and greens doesn't work well.
