Ingredients
1 large yellow onion, thinly sliced
4–5 tablespoons chickpea flour (besan)
1 teaspoon red chile powder
pinch pinch of salt
oil for deep frying (about 2 inches deep in pan)
Directions
Peel and thinly slice the large yellow onion into rings or half-rings, then set aside.
In a bowl, combine the chickpea flour, red chile powder, and salt. Stir well to distribute the spices evenly.
Add the sliced onions to the dry mixture and toss gently until all onion pieces are lightly coated with the flour. The mixture should be dry and crumbly, not wet.
Heat oil in a deep skillet or frying pan to 350°F (175°C), or until a small piece of onion sizzles immediately when dropped into the oil.
Carefully add the coated onion pieces to the hot oil in small batches, stirring gently to prevent clumping and ensure even frying. Do not overcrowd the pan.
Fry for 3–4 minutes, stirring occasionally, until the pakoras turn golden brown and crispy on all sides.
Remove the cooked pakoras with a slotted spoon and drain on paper towels to remove excess oil. Serve hot and crispy.
