Ingredients
4 cups watermelon, cut into 1-inch cubes
2 tablespoons extra virgin olive oil
2 teaspoons balsamic vinegar
1 large handful fresh basil, thinly sliced into a chiffonade
3 tablespoons crumbled feta cheese
Directions
Place the watermelon cubes in a large mixing bowl. Drizzle with olive oil and balsamic vinegar, then gently toss using your hands until the watermelon is lightly coated with the vinaigrette.
Scatter the sliced basil and crumbled feta cheese over the watermelon mixture, then gently fold together using your hands or a soft spatula until evenly combined, being careful not to crush the watermelon.
Serve immediately while chilled, or cover and refrigerate for up to 2 days before serving.
Comments
All five ingredients are stocked year-round at any Charlotte grocer—watermelon peaks in summer but is widely available even in winter now, and feta is a staple at Harris Teeter, Food Lion, Publix, Kroger, and Walmart. The stated 15 minutes is honest, maybe even generous; you cube watermelon, crumble feta, tear basil, and dress. Cost per serving lands around $1.50–$2.00 depending on watermelon seasonality, driven almost entirely by the melon itself. It's a no-cook side that holds reasonably well for a day, though basil will blacken slightly in the fridge—fine for a make-ahead but best eaten same day. The only real drawback is that it's seasonal comfort food: a July staple in Charlotte that feels less essential in February, though it works fine any time.
