Ingredients
1 cup fresh or frozen chopped peaches
2 teaspoons fresh lemon juice
1 1/2 teaspoons cornstarch
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground clove
1 teaspoon sugar for filling
1 1/2 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon baking soda
Pinch of salt
1 tablespoon melted unsalted butter
1 1/2 tablespoons buttermilk
1 drop vanilla extract
1/8 teaspoon ground cinnamon for topping
1 teaspoon sugar for topping
Directions
Preheat your oven to 375°F (190°C). Prepare two small oven-safe ramekins or baking dishes by placing them on a baking sheet.
In a medium bowl, combine the chopped peaches, lemon juice, 1 teaspoon of sugar, cornstarch, 1/8 teaspoon cinnamon, nutmeg, and clove. Stir gently until the peaches are evenly coated with the spices and cornstarch. Divide the mixture evenly between the two ramekins.
Place the ramekins in the oven and bake for 8-10 minutes, until the peaches are heated through and the filling begins to bubble around the edges.
While the peaches are baking, prepare the biscuit topping. In another medium bowl, whisk together the flour, baking powder, baking soda, and salt.
Add the melted butter, buttermilk, and vanilla extract to the dry ingredients. Whisk until just combined into a thick, slightly lumpy batter.
Remove the hot peaches from the oven. Carefully spoon the batter over the top of each ramekin, spreading it gently to cover as much of the filling as possible. The batter does not need to completely cover the filling.
In a small bowl, mix together 1/8 teaspoon cinnamon and 1 teaspoon sugar. Sprinkle this cinnamon-sugar mixture evenly over the top of each cobbler.
Return the ramekins to the oven and bake for 20-25 minutes, until the biscuit topping is golden brown and a toothpick inserted into the center of the biscuit comes out clean or with just a few moist crumbs.
Remove from the oven and let cool for 5 minutes before serving. Top each cobbler with a scoop of vanilla ice cream if desired.
