Ingredients
1 tablespoon tallow
1 large yellow onion, sliced into half-moon rings
Salt and black pepper to taste
1 teaspoon cayenne pepper
1 teaspoon chipotle powder
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon dried oregano
2 teaspoons coarse black pepper
1 tablespoon sea salt
1 teaspoon dried thyme
1 tablespoon sweet paprika
1 pound ground beef (80/20)
1 tablespoon tallow
8 cups fresh spinach
Directions
Heat 1 tablespoon of tallow in a medium skillet over medium-low heat until shimmering.
Add the sliced onion rings and season generously with salt and black pepper. Cook slowly, stirring occasionally, until the onions turn a deep golden brown and are very tender and sweet, about 30 minutes. Transfer to a plate and set aside.
While the onions are caramelizing, preheat your grill to high heat.
While the grill preheats, divide the ground beef into 3 equal portions and gently form into burger patties about ¾ inch thick. Season both sides lightly with salt and pepper. In a small bowl, thoroughly combine the cayenne pepper, chipotle powder, garlic powder, onion powder, oregano, coarse black pepper, sea salt, thyme, and sweet paprika. Generously coat both sides of each burger patty with the Cajun spice mixture.
Place the seasoned burgers on the hot grill and cook for approximately 5 minutes on the first side without moving them. Flip and cook for an additional 5 minutes. The internal temperature should reach 160°F for safe consumption of ground beef. Remove the burgers from the grill and let them rest for 5 minutes.
While the burgers are resting, add the remaining 1 tablespoon of tallow to the skillet over medium heat. Once melted, add the fresh spinach and season lightly with salt. Sauté, stirring frequently, until the spinach is completely wilted and tender, about 2 minutes.
To serve, divide the wilted spinach among three plates, creating a bed for each burger. Place one rested burger on top of the spinach, then top generously with the caramelized onions. Serve immediately and enjoy.
Comments
The Cajun Burgers delivers solid flavor with a modest spice blend and caramelized onions, both of which are simple and available at any Charlotte grocer. Ground beef and onions are staples, and the spices (cayenne, chipotle powder, garlic powder, paprika, oregano, thyme) are standard at Harris Teeter, Food Lion, Walmart, or ALDI. The stated 45 minutes is honest for caramelizing onions low and slow, then forming patties and cooking; this is not a weeknight speed meal, but it's straightforward. Cost per serving runs around $3.50-$4.00, driven by the ground beef and tallow, which keeps it affordable for a family burger night. The spinach arrives unannounced in the ingredient list and feels like a texture add rather than a defining part; it will wilt into the meat or sit as a topping depending on how you read the recipe. The finished burger reheats indifferently, so this is best consumed fresh the same night.
