1½ cups cooked quinoa

¼ cup plus 2 tablespoons chia seeds

1½ cups chocolate almond milk

¾ teaspoon Chinese five spice

Directions

  1. In a medium bowl, combine the cooked quinoa and chia seeds, stirring together until evenly distributed.

  2. Pour the chocolate almond milk into a separate small bowl or measuring cup. Whisk the Chinese five spice into the milk until fully dissolved and no lumps remain.

  3. Pour the spiced chocolate almond milk over the quinoa and chia mixture. Stir thoroughly to ensure all ingredients are well combined and the quinoa is evenly coated.

  4. Divide the mixture evenly among four jars or containers, filling each about three-quarters full.

  5. Cover each jar or container with a lid and place in the refrigerator overnight, or for at least 8 hours, to allow the flavors to meld and the pudding to set. Enjoy directly from the jar or transfer to a bowl.
