1 cup almond flour
1 cup oat flour
2 teaspoons baking powder
2 ripe bananas, peeled
¼ cup creamy peanut butter
2 large eggs
½ cup plain Greek yogurt
½ cup unsweetened applesauce
2 teaspoons vanilla extract
Non-stick cooking spray
Directions
Preheat your oven to 350°F. Lightly spray a standard 18-cup muffin tin with non-stick cooking spray and set aside.
In a large mixing bowl, whisk together the almond flour, oat flour, and baking powder until well combined. Set the dry mixture aside.
Add the peeled bananas, peanut butter, eggs, Greek yogurt, applesauce, and vanilla extract to a blender. Blend on high speed for approximately 30 seconds, until the mixture is completely smooth.
Pour the wet ingredients into the bowl with the dry ingredients. Gently fold together with a spatula until just combined—do not overmix, as this can result in tough muffins.
Divide the batter evenly among the 18 muffin cups, filling each about three-quarters full.
Bake for 20 to 25 minutes, or until the edges are light golden brown and a toothpick inserted into the center of a muffin comes out clean or with just a few moist crumbs.
Remove the muffin tin from the oven and let the muffins cool in the pan for about 10 minutes. Transfer to a wire rack to cool completely before serving.
