Cheesy Brown Rice Quesadillas

Ingredients
1 cup water
1/2 cup instant brown rice
1/2 cup salsa
4 flour tortillas, 8-inch
1/2 cup shredded Mexican blend or cheddar cheese

Directions
Pour the water into a medium saucepan and bring to a boil over high heat. Add the instant brown rice, stir well, then reduce heat to low. Cover with a lid and simmer for 10-12 minutes, until all the water has been absorbed and the rice is tender.
Remove the pan from heat and let the rice cool for 2-3 minutes.
Transfer the cooked rice to a bowl and stir in the salsa until well combined.
Lay one tortilla flat on a clean work surface. Spoon one-quarter of the rice-salsa mixture onto the left half of the tortilla, then sprinkle one-quarter of the shredded cheese over the rice. Fold the tortilla in half to enclose the filling. Repeat with the remaining three tortillas.
Lightly spray a 9-inch skillet with cooking spray and place it over medium-low heat until hot. Working one at a time, transfer a folded quesadilla to the skillet. Lightly spray the top surface with cooking spray and cook for 2-3 minutes until golden and crispy. Carefully flip and cook the other side for 2-3 minutes more, until the cheese is completely melted. Transfer to a plate and repeat with the remaining quesadillas.
Cut each quesadilla in half and serve warm with additional salsa and sour cream on the side, if desired.
