Ingredients

1 head white cabbage, shredded

1/2 small cantaloupe, seeded, peeled and cut into bite-sized pieces

1/2 small honeydew melon, seeded, peeled and cut into bite-sized pieces

Leaves from 1/2 bunch fresh cilantro, roughly chopped

Leaves from 1/2 bunch fresh mint, roughly chopped

1/3 cup dried red currants or zereshk

Salt to taste

Freshly ground black pepper to taste

Juice of 1 large lemon, plus more as needed

3 to 4 tablespoons Champagne vinegar or other mild white vinegar

1/4 cup extra-virgin olive oil

Directions

  1. Place the shredded cabbage in a large serving bowl. Add the cantaloupe pieces, honeydew pieces, cilantro leaves, mint leaves, and dried red currants. Gently toss all the ingredients together until evenly distributed.

  2. Just before serving, season the salad with salt and black pepper to your taste. Pour the lemon juice and vinegar over the salad and toss well to ensure all components are evenly coated with the dressing.

  3. Drizzle the extra-virgin olive oil over the salad and toss once more until everything is well combined. Taste and adjust the seasoning with additional lemon juice, vinegar, salt, or pepper as needed. Serve immediately while the salad is fresh and crisp.
