Ingredients
1 cup butter, softened
1¼ cups white sugar
3 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
½ teaspoon cream of tartar
3½ cups unbleached all-purpose flour
1 cup peeled and finely diced peaches
Directions
Preheat your oven to 350°F. Lightly grease two baking sheets and set aside.
In a large mixing bowl, cream together the softened butter and white sugar until the mixture is light and fluffy, about 2-3 minutes of beating.
Beat in the eggs one at a time, then add the vanilla extract, baking soda, and cream of tartar. Mix until well combined.
With a wooden spoon, gently stir in the unbleached flour until just combined, then fold in the diced peaches until evenly distributed throughout the dough.
Using an ice cream scoop or spoon, drop portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 15-18 minutes, until the edges are lightly golden brown and the centers are set.
Remove from the oven and allow cookies to cool on the baking sheets for 2-3 minutes before transferring to a wire rack to cool completely.
