Ingredients

6 boneless skinless chicken thighs

to taste sea salt

to taste black pepper

¼ cup Dijon mustard

¼ cup raw honey, melted

1½ teaspoons coconut aminos

½ teaspoon turmeric

2 scallions, sliced

1 tablespoon minced fresh ginger

Directions

  1. Pat the chicken thighs dry with paper towels and season both sides generously with sea salt and black pepper.

  2. In a small bowl, whisk together the Dijon mustard, melted honey, coconut aminos, turmeric, and minced ginger until smooth and well combined.

  3. Heat a large skillet over medium-high heat. Once hot, add the seasoned chicken thighs and cook for 6-7 minutes until the bottoms are lightly browned.

  4. Flip the chicken thighs and pour the honey-mustard glaze evenly over them. Reduce heat to medium and continue cooking for another 12-15 minutes, stirring the glaze occasionally, until the chicken reaches an internal temperature of 165°F.

  5. Transfer the cooked chicken to a serving platter and drizzle with any remaining glaze from the skillet. Garnish with sliced scallions and serve immediately.
