1 egg white

2 teaspoons Cajun seasoning

1 tablespoon sweet barbecue sauce

Pinch of salt

1 cup pumpkin seeds

2 teaspoons sugar

Directions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.

  2. In a small bowl, whisk together the egg white until slightly frothy.

  3. Add the Cajun seasoning, sweet barbecue sauce, sugar, and salt to the egg white. Whisk until well combined into a smooth coating.

  4. Place the pumpkin seeds in a large mixing bowl. Pour the egg white mixture over the seeds and stir thoroughly until every seed is evenly coated with the glaze.

  5. Spread the coated pumpkin seeds in a single layer on the prepared baking sheet.

  6. Roast for 20–25 minutes, stirring halfway through, until the seeds are golden and crispy. The coating should be caramelized and fragrant.

  7. Remove from the oven and let cool on the baking sheet for 5 minutes before serving. The seeds will crisp up further as they cool. Store in an airtight container.
