Ingredients
3 slices Prosciutto, thinly sliced
2 ounces Feta cheese
Fresh sage, mint, basil, or oregano leaves (optional)
⅓ cup Extra-virgin olive oil
Directions
Using a sharp knife, cut each slice of prosciutto into rectangular strips approximately 1 inch by 2 inches (3 cm by 5 cm).
Cut the feta cheese into thin bâtons or sticks roughly the same thickness as the width of the prosciutto strips.
If using fresh herbs, slice a few leaves very thinly into thin ribbons or small pieces.
Place a feta stick on the narrow edge of a prosciutto rectangle, add a few herb pieces if desired, then roll tightly, pressing gently to ensure the roll holds together securely.
Transfer each completed roll to a shallow serving dish and repeat with the remaining prosciutto and feta.
Pour the extra-virgin olive oil over the rolls until they are well saturated and nearly fully submerged.
Serve immediately at room temperature, or cover and refrigerate until ready to serve. If chilled, remove from the refrigerator 15 to 20 minutes before serving to allow the rolls to return to room temperature.
