Ingredients

4 teaspoons Chipotles in adobo sauce, seeded and minced

½ cup Mayonnaise

½ lime, juiced Fresh lime juice

2 teaspoons Fresh cilantro, chopped

Directions

  1. Seed the chipotle peppers to remove excess heat, then mince them finely into small, even pieces.

  2. Place the mayonnaise in a medium bowl and add the minced chipotles along with any adobo sauce clinging to them.

  3. Squeeze the lime juice to extract fresh juice, then pour it into the bowl with the mayonnaise and chipotle mixture.

  4. Chop the fresh cilantro and add it to the bowl.

  5. Stir all ingredients together until well combined and the color is evenly distributed throughout.

  6. Taste and adjust seasonings as desired. Serve immediately or refrigerate until ready to use.
