Ingredients
1 cup gingersnap cookie crumbs
1 tablespoon butter, melted
8 oz. cream cheese, softened
¼ cup granulated sugar
½ cup brown sugar
2 tablespoons whipping cream
1 teaspoon vanilla extract
14 oz. pumpkin puree
½ teaspoon ground cinnamon
¼ teaspoon ground allspice
¼ cup chopped pecans
4 whole pecan halves for garnish
Sweetened whipped cream for garnish
Directions
Preheat your oven to 350°F. Crush the gingersnap cookies into crumbs, then combine with melted butter and mix well until the crumbs are evenly coated.
Spread the buttered gingersnap mixture on a baking sheet and toast in the preheated oven for 3 to 5 minutes, until the crumbs begin to brown lightly. Remove from the oven and let cool completely.
In a food processor, blend the softened cream cheese, granulated sugar, brown sugar, whipping cream, and vanilla extract until the mixture is smooth and creamy.
Add the pumpkin puree, cinnamon, and allspice to the cream cheese mixture. Process until all ingredients are fully combined and the filling is smooth.
Divide half of the cooled gingersnap crumbs evenly among four serving dishes (each with ½ cup capacity). Sprinkle some of the chopped pecans over the crumb layer in each dish.
Divide half of the pumpkin cheesecake mixture evenly between the four dishes, spooning it over the crumbs and pecans.
Top each parfait with the remaining gingersnap crumbs, then distribute the rest of the chopped pecans over the crumb layer.
Divide the remaining pumpkin cheesecake mixture evenly among the four dishes, layering it on top.
Refrigerate the parfaits for at least 1 hour until the filling is set and firm.
Just before serving, top each parfait with a dollop of sweetened whipped cream and crown with a whole pecan half.
Comments
These parfaits hit Charlotte's fall seasonality perfectly—pumpkin and pecans are both regional staples, and the simple ingredient list stays within reach at any major local chain without a second stop. The real time clock runs closer to 50-55 minutes when you account for softening cream cheese, whipping cream by hand or mixer, and the layering itself, not the 45 minutes claimed. At roughly $2.50 to $3.00 per serving, cost is reasonable, driven mainly by cream cheese and whipping cream rather than exotic components. The dish works well for weeknight entertaining since assembly happens at the end, though leftovers dry out by the next day and aren't worth saving—make this to finish the same evening.
