Cajun Chicken Rigatoni

Ingredients
Kosher salt
1 lb. rigatoni
2 tbsp. extra-virgin olive oil
2 cloves garlic, minced
1 c. diced onions
1 tbsp. Cajun spice mix
1 tbsp. paprika
Freshly ground black pepper
1/2 c. white wine, such as Sauvignon Blanc
1 c. low-sodium chicken stock
1/2 c. heavy cream
1 c. frozen peas
2 c. shredded rotisserie chicken, skin removed
1 tbsp. butter
1/2 c. chopped fresh parsley
1 c. shredded cheddar cheese, plus more for serving
Directions
Fill an 8-quart pot with water and bring to a rolling boil over high heat. Season generously with kosher salt. Add rigatoni and cook according to package directions until al dente. Drain the pasta, reserving 1 cup of the cooking water. Return the drained pasta to the pot and set aside.
While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add minced garlic and diced onions, stirring frequently with a wooden spoon until softened, about 2 minutes. Season the mixture with Cajun spice mix, paprika, kosher salt, and freshly ground black pepper to taste.
Pour the white wine into the skillet and bring to a simmer. Add the chicken stock and return to a gentle boil. Simmer for 4 minutes to allow the flavors to meld.
Reduce heat to low and stir in the heavy cream. Add the peas and shredded rotisserie chicken, stirring gently until the chicken is heated through, about 2 minutes.
Remove the skillet from heat. Add the cooked pasta to the sauce and stir gently to combine. Stir in the butter, chopped fresh parsley, and shredded cheddar cheese until evenly distributed. If the mixture seems too thick, add reserved pasta water a little at a time until you reach your desired consistency.
Serve the rigatoni directly from the skillet or transfer to a serving platter. Top each portion with additional shredded cheddar cheese before serving.
