Ingredients
½ lb Beef stir-fry strips
1 lb Frozen pepper stir-fry mixture, thawed
2 tbsp Extra-virgin olive oil
2 tbsp Taco seasoning mix
1 large Thin pizza crust (12-inch)
½ cup Lime-garlic salsa
2 cup Shredded Mexican blend cheese
Sour cream, for serving
Refrigerated guacamole, for serving
Fresh cilantro, for garnish
Directions
Preheat your grill to medium heat. Once ready, lightly oil the grill grate to prevent sticking.
In a bowl, combine the beef strips, thawed pepper stir-fry, olive oil, and taco seasoning mix until well coated.
Place the seasoned beef and pepper mixture on the hot oiled grill and cook for about 5 minutes, stirring occasionally, until the beef is browned and cooked through and the peppers are tender.
Carefully place the pizza crust directly on the grill grate. Spread the salsa evenly over the crust, then top with shredded cheese and the cooked beef and pepper mixture.
Reduce grill heat to medium-low, cover the grill, and cook for 8 to 10 minutes until the cheese is fully melted and begins to bubble.
Remove the fajita pie from the grill using a wide spatula. Transfer to a cutting board and let cool for 1 minute.
Garnish with fresh cilantro, sour cream, and guacamole. Slice and serve hot.
Comments
The 22-minute claim ignores browning the beef and sautéing peppers properly; expect 35–40 minutes with a real sear and soften. Ingredient availability is strong across Charlotte chains—beef, peppers, taco seasoning, pizza crust, salsa, and Mexican cheese are everywhere—though fresh cilantro requires a quick stop if you don't stock it regularly. Cost per serving runs $3.50–4.50 depending on beef quality and whether you buy guacamole or make it; the pizza crust base keeps it budget-friendly. It reheats adequately but the crust can soften and lose texture, so it's best served fresh the same night; it's an easy weeknight family dish with minimal fussiness once you account for the actual cooking time.
