Ingredients

2 tbsp extra-virgin olive oil

4 garlic cloves, grated

2 limes, zested and juiced

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1 lb tail-on shrimp, peeled and deveined

3 tbsp unsalted butter

1/2 cup chopped fresh cilantro, leaves and stems

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the grated garlic and sauté for about 1 minute, stirring frequently, until fragrant but not browned.

  2. Add the lime zest, lime juice, kosher salt, and black pepper to the skillet. Stir well to combine.

  3. Add the shrimp to the skillet and cook for about 2 minutes, stirring occasionally, until the shrimp turn pink and opaque. Ensure the shrimp reach an internal temperature of 145°F.

  4. Remove the skillet from the heat. Add the unsalted butter and chopped cilantro, then stir gently until the butter is completely melted and forms a silky sauce coating the shrimp.

  5. Serve immediately while the sauce is warm and the shrimp are at their best.

Every ingredient is stocked at every major Charlotte grocer, and shrimp is a strength of our coastal access—this costs roughly $12-15 total for four servings, or $3-4 per person, driven by shrimp weight and quality. The stated 10 minutes is honest if you buy pre-peeled shrimp; if you're deveining, add 5-7 minutes. This is a bare-pan weeknight dish that demands active attention (shrimp overcooks in 90 seconds), reheats poorly, and works best fresh and hot, which limits its flexibility for families with staggered meal times or next-day lunch plans.
