Ingredients

8 ripe Roma plum tomatoes, chopped

2 garlic cloves, minced

1/2 large onion, chopped

6 fresh basil leaves

2 tablespoons olive oil

Salt to taste

Black pepper to taste

2 French baguettes (Italian bread), cut into 1/2 inch diagonal slices

Directions

  1. Preheat your oven to 400°F.

  2. Combine the chopped tomatoes, minced garlic, chopped onion, fresh basil leaves, and olive oil in a medium bowl.

  3. Season the tomato mixture with salt and black pepper to your taste.

  4. Arrange the bread slices in a single layer on a baking sheet.

  5. Place the baking sheet in the preheated oven and toast the bread for 5 to 7 minutes, until the slices are lightly golden and beginning to brown at the edges.

  6. Remove the toasted bread from the oven and transfer the slices to a serving platter.

  7. Just before serving, spoon the tomato mixture onto each slice of bread, or serve the tomato topping alongside for guests to add themselves. Add the mixture at the last moment to preserve the crispy texture of the bread.
