1/2 cup fresh cilantro leaves and tender stems, plus more for topping

1 Zest and juice of 1 lime

  3. Heat the remaining 2 tablespoons peanut oil in a medium oven-safe nonstick skillet over medium-high heat. Add the ground pork, remaining 1 teaspoon hoisin sauce, and 1/4 teaspoon kosher salt; cook, breaking up the meat with a spoon, until browned, about 4 minutes. Stir in the drained vegetables, half of the cilantro-ginger sauce, and salt and pepper to taste.

  4. Pour the whisked eggs evenly over the pork and vegetable mixture. Increase the heat to high and cook without stirring for 2 minutes, until the edges begin to set.

  5. Transfer the skillet to the preheated 400°F oven and bake until the frittata is set throughout (no jiggle in the center when gently shaken), 20 to 25 minutes. Remove from the oven and let rest, covered, for 5 minutes.

  6. Top the frittata with the remaining cilantro-ginger sauce, additional hoisin sauce to taste, and fresh cilantro. Slice into wedges and serve.
