16 oz plain, full-fat Greek yogurt
1 large cucumber, peeled and coarsely grated
1 tablespoon extra virgin olive oil
¼ cup fresh dill, chopped
2 teaspoons garlic, minced
1 teaspoon kosher salt
1 teaspoon fresh lemon juice
¼ cup water, as needed
½ teaspoon white pepper
Directions
In a large mixing bowl, combine the Greek yogurt, olive oil, lemon juice, kosher salt, and white pepper. Whisk together until smooth and well blended.
Stir in the minced garlic, grated cucumber, and chopped fresh dill until evenly distributed throughout the mixture.
Gradually add the water a little at a time, stirring well after each addition, until the tzatziki reaches your desired consistency. Start with the ¼ cup of water and add more only if needed—the dip should remain thick and hearty, not thin or watery.
For best flavor, cover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to fully develop and blend together.
Just before serving, stir the tzatziki once more to ensure even distribution of all ingredients. Serve chilled as a dip, spread, or condiment.
