Ingredients
25 medium dried bay leaves
3 1/4 teaspoons dried thyme
3 1/4 teaspoons dried oregano
1 1/2 teaspoons whole black peppercorns
3 tablespoons hot Creole seasoning
2 teaspoons garlic powder
Directions
Measure out all the dry bay leaves and break them into smaller pieces to make them easier to grind.
Add the broken bay leaves to a spice grinder or mortar along with the whole black peppercorns.
Grind the bay leaves and peppercorns together until they form a coarse powder. If using a mortar, crush with the pestle in a circular grinding motion until the desired consistency is reached.
Transfer the ground bay and pepper mixture to a small bowl.
Add the dried thyme, dried oregano, hot Creole seasoning, and garlic powder to the bowl with the ground spices.
Stir all ingredients together thoroughly with a spoon or small whisk until the spice blend is evenly combined and uniform in color and texture.
Store the finished spice rub in an airtight container until ready to apply to the turkey before deep-frying.
