Ingredients

1 (15-ounce) can chickpeas, rinsed and drained

2 cloves garlic, minced

2 tablespoons tahini

3 tablespoons olive oil, plus more for serving

½ tablespoon ground cumin

½ tablespoon ground coriander

½ tablespoon dried oregano

½ tablespoon dried parsley

½ teaspoon chili powder

¼–½ teaspoon kosher salt

4–6 tablespoons filtered water

Directions

  1. In a food processor, combine the drained chickpeas, minced garlic, tahini, cumin, coriander, oregano, parsley, chili powder, salt, and 4 tablespoons of water. Pulse and process until the mixture becomes mostly smooth, stopping occasionally to scrape down the sides with a spatula as needed.

  2. With the food processor running, slowly drizzle in the 3 tablespoons of olive oil until fully incorporated. For a smoother, creamier consistency, add an additional 1–2 tablespoons of water and pulse again.

  3. Taste the hummus and adjust the salt to your preference, pulsing once more to blend. Transfer the hummus to a serving bowl and drizzle generously with additional olive oil on top for richness and visual appeal.

  4. Serve the falafel hummus with fresh raw vegetables, warm pita wedges, or crackers as a dip, or use it as a spread on sandwiches and grain bowls.
