Ingredients
1 tablespoon butter
1 cup diced carrots
1/2 cup diced celery
1/2 onion, diced
4 cups chicken broth
2-3 large potatoes, peeled and diced
1 teaspoon dried parsley
1 pound ground beef, cooked
1 cup milk
1 cup Velveeta cheese, cubed
salt and pepper to taste
Directions
In a large soup pot, melt the butter over medium heat. Add the diced carrots, celery, and onion. Sauté these vegetables until the onion becomes translucent and the vegetables begin to soften, approximately 5-8 minutes.
Pour in the chicken broth and add the diced potatoes and dried parsley. Bring the mixture to a low boil and cook uncovered for 10 minutes, stirring occasionally, until the potatoes are tender and cooked through.
Reduce heat to low. Stir in the cooked ground beef, cubed cheese, and milk. Stir frequently until the cheese is completely melted and all ingredients are well combined, about 5 minutes.
Season the soup with salt and pepper to your taste. Serve hot with fresh bread on the side.
