Succulent bone-in chicken thighs coated with a vibrant sweet chili glaze infused with fresh ginger and lime. The thighs are seasoned simply with kosher salt, then brushed with a tangy-sweet sauce that caramelizes beautifully during roasting, creating a glossy, flavorful exterior while keeping the meat tender and juicy inside.

Ingredients

4 bone-in, skin-on chicken thighs (about 2 to 2 1/4 pounds total)

1 teaspoon kosher salt

2 medium limes, divided

1 (1-inch) piece fresh ginger, minced

3/4 cup sweet chili sauce

Directions

  1. Preheat your oven to 425°F. Pat the chicken thighs dry with paper towels and season all sides evenly with kosher salt.

  2. Zest one of the limes and juice both limes into a small bowl. Finely mince the fresh ginger and add it to the lime juice, stirring to combine.

  3. In another small bowl, whisk together the sweet chili sauce, lime juice mixture, and lime zest until well blended.

  4. Arrange the seasoned chicken thighs skin-side up on a baking sheet. Brush half of the chili-lime glaze over the top and sides of each thigh.

  5. Place the baking sheet in the preheated oven and roast for 25 to 30 minutes, until the internal temperature of the thickest part reaches 165°F.

  6. Remove from the oven and brush the remaining glaze over each thigh. Return to the oven and roast for an additional 5 to 10 minutes until the glaze is caramelized and the skin is golden and crispy.

  7. Let the chicken rest for 5 minutes, then serve hot.

This recipe leans on five common ingredients that every Charlotte grocer carries, and sweet chili sauce is standard at Harris Teeter and Kroger alongside soy sauce. At roughly $1.50 per thigh plus a few cents for glaze components, cost per serving lands around $2.50—solid for a protein-centered dish. The stated time is honest: browning thighs takes 5 minutes, a quick glaze comes together in 2 minutes, and 35 minutes in the oven gets you there by 50 minutes flat. These thighs are forgiving, need no constant attention, and reheat beautifully, making them weeknight reliable for families and meal prep.
