Caramelized Banana and Fig Oatmeal

Ingredients
½ cup old-fashioned rolled oats
1 cup water or milk of choice
1 medium ripe banana
½ tablespoon unsalted butter
2 tablespoons packed brown sugar
1 tablespoon fig preserves
1-2 tablespoons unsweetened shredded coconut
1-2 tablespoons water
Pinch of salt
Directions
Cook the oats according to package directions using water or your milk of choice. Season lightly with salt and set aside in a bowl, keeping it warm.
Slice the banana into ¼-inch thick rounds.
Melt the butter in a small saucepan over medium-high heat. Add the brown sugar and stir until it dissolves and begins to bubble, about 1 minute.
Gently add the banana slices to the caramel mixture, stirring occasionally for 3-4 minutes until the bananas are glazed and slightly softened. The sauce should be thick and sticky.
Spoon the caramelized bananas and all the caramel sauce over the warm oatmeal.
In a small bowl, whisk the fig preserves with 1-2 tablespoons of water until thin enough to drizzle. Drizzle this mixture over the oatmeal bowl.
Sprinkle the shredded coconut over the top and serve immediately while warm.
