Ingredients
3½ tbsp mayonnaise
1½ tbsp pesto
3½ breasts cooked skinless chicken breast, shredded
2 cups fresh rocket
6 rolls granary or seeded bread rolls
1½ tbsp butter
Directions
In a medium bowl, combine the mayonnaise and pesto, stirring until well blended. Fold in the shredded cooked chicken, mixing gently until evenly coated with the pesto-mayo mixture.
Slice each bread roll horizontally. Lightly butter the cut surfaces of each roll.
Divide the chicken mixture evenly among the six rolls, spooning it onto the bottom half of each roll. Top with a small handful of fresh rocket leaves.
Close each sandwich with the top half of the roll and serve immediately.
Comments
This sandwich assembles in seven minutes if the chicken is already cooked, which is realistic for a weeknight using a rotisserie bird from any major Charlotte grocer. Pesto, rocket, and good bread may nudge you toward Harris Teeter or Kroger for quality, but all ingredients are standard grocery-store staples available at Food Lion or Walmart without a special trip. The cost per serving lands around $2.50 to $3.00 per sandwich, driven mainly by the chicken; it's genuinely cheap eating for a family of six. This is a same-night dish and does not reheat well, but it suits a quick lunch or light dinner and holds together without fussy technique.
