1 cup fiber cereal (such as flax cereal)
3/4 cup creamy peanut butter
1 ripe banana
1/3 cup granulated sugar
6 oz melting chocolate (bittersweet and/or semisweet)

Directions
Using a food processor, pulse the fiber cereal until it is broken down into fine, even crumbs.
Add the peanut butter, banana, and granulated sugar to the food processor with the cereal crumbs. Pulse several times until all ingredients are evenly combined and the mixture holds together when pressed.
Using your hands or a small cookie scoop, roll the dough into 24 equal-sized balls. Place each ball on a wax-paper lined baking sheet.
Transfer the baking sheet to the refrigerator and chill the balls for approximately 1 hour, until they are firm.
Melt the chocolate according to package directions, then pour into a shallow bowl. Working with one truffle at a time, submerge it in the melted chocolate and use a spoon to coat completely. Tap the spoon against the rim of the bowl to remove excess chocolate.
Place the chocolate-coated truffle on a clean wax-paper lined baking sheet. Immediately sprinkle with chocolate sprinkles while the chocolate is still wet.
Repeat steps 5 and 6 with remaining truffles. Return the finished truffles to the refrigerator until the chocolate coating is completely set, about 30 minutes. Store in an airtight container in the refrigerator and enjoy within a few days for best flavor and texture.
