1 medium potato
4 cups confectioners' sugar
2 1/2 cups shredded coconut
2 tablespoons coconut oil
1 teaspoon vanilla extract
Cinnamon for rolling
Directions
Peel and cube the potato, then boil in salted water until very tender, about 15 minutes. Drain well and press with a fork or ricer until smooth; let cool slightly.
In a large mixing bowl, combine the mashed potato with the confectioners' sugar, mixing until fully incorporated.
Stir in the shredded coconut, coconut oil, and vanilla extract until the mixture is evenly combined and holds together.
Using a small spoon or melon baller, form the mixture into oval or round candies about the size of a grape or small walnut.
Roll each piece in cinnamon until lightly coated on all sides, then place on a parchment-lined tray.
Refrigerate for at least 1 hour before serving. Store in an airtight container in the refrigerator for up to one week.
