Ingredients

1 cup plain, nonfat Greek yogurt

3/4 cup unsweetened applesauce

1/2 cup unsweetened vanilla almond milk

1 cup peanut flour

1/8 teaspoon pink Himalayan salt

1/2 teaspoon stevia extract

Directions

  1. Add the Greek yogurt, applesauce, almond milk, and stevia extract to a blender or food processor.

  2. Blend on medium speed until the mixture is completely smooth, about 1-2 minutes.

  3. In a small bowl, whisk together the peanut flour and pink Himalayan salt until well combined.

  4. With the blender or food processor still running on low speed, gradually add the dry peanut flour mixture through the lid opening or chute, stirring in small amounts at a time to avoid lumps.

  5. Continue blending until the dip is smooth and creamy, about 1-2 minutes more.

  6. Transfer the dip to a serving bowl and cover tightly with plastic wrap.

  7. Refrigerate for at least 4 hours, or preferably overnight, to allow flavors to meld and the dip to thicken.

  8. Serve chilled with fresh apple slices, strawberries, gluten-free crackers, or enjoy by the spoonful.
