Ingredients
5 medium russet potatoes
1/4 cup olive oil
Sea salt
Freshly ground black pepper
1 cup sour cream
1/2 cup ranch dressing
1/4 cup whole milk
1 cup shredded sharp cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup real bacon bits
1/4 cup chopped fresh green onions
Directions
Preheat your oven to 400°F. Line a large baking sheet with aluminum foil.
Wash and peel the potatoes. Cut them into thick steak fries or wedge-shaped pieces, roughly 1/2 inch thick.
Place the cut potatoes on the prepared baking sheet. Drizzle with olive oil and toss gently with tongs to coat all pieces evenly.
Season the potatoes generously with sea salt, freshly ground black pepper, and any additional seasoning salt you prefer.
Bake in the preheated oven for 40 minutes, or until the potatoes are golden and fork-tender throughout.
While the potatoes bake, prepare the creamy sauce. In a medium bowl, whisk together the sour cream, ranch dressing, and milk until smooth and well combined.
Preheat your broiler to high.
Spread about three-quarters of the sour cream mixture evenly across a serving platter.
Remove the hot baked potatoes from the oven and arrange them on top of the sour cream sauce.
Drizzle the remaining sour cream sauce over the potatoes.
Sprinkle the shredded cheddar and mozzarella cheeses evenly over the potatoes. Top with bacon bits and fresh green onions.
Place the platter under the broiler for 1-2 minutes, just until the cheese is melted and bubbly. Watch carefully to prevent burning.
Remove from the broiler and serve immediately. These loaded fries are best enjoyed warm and will be deliciously messy!
