Ingredients

¾ cup medium-coarse bulgur wheat

1 cup fresh mint leaves, chopped

1 small small yellow onion, finely chopped

1 tsp ground cumin

1 tsp ground allspice

1 tsp salt

¾ tsp ground black pepper

95% lean ground beef

4 tbsp olive oil

1 medium cucumber

1 cup fat-free plain Greek yogurt

Directions

  1. Place the bulgur wheat in a bowl and cover with 3/4 cup of hot water. Let it soak for 5 minutes, then drain any excess water and set aside to cool slightly.

  2. In a large mixing bowl, combine the cooled bulgur, chopped mint, finely chopped onion, ground cumin, ground allspice, salt, and black pepper.

  3. Add the ground beef to the bulgur mixture and gently combine using your hands until just mixed—do not overmix or the patties will become tough.

  4. Divide the beef mixture into 8 equal portions. Shape each into a flat patty about 1/2 inch thick.

  5. Heat the olive oil in a large skillet over medium-high heat. Once hot, carefully place the patties in the skillet in a single layer, working in batches if necessary to avoid crowding.

  6. Cook the patties for 6–7 minutes until the internal temperature reaches 160°F, turning once halfway through to ensure even browning.

  7. Remove the cooked patties from the skillet and set on a clean plate. Let rest for 2 minutes.

  8. Peel and thinly slice or dice the cucumber into a serving bowl.

  9. In a small bowl, stir the Greek yogurt until smooth. If desired, season lightly with a pinch of salt and pepper.

  10. Serve the beef patties warm alongside the fresh cucumber slices and Greek yogurt sauce for dipping or drizzling.

Bulgur wheat is the only ingredient requiring a special trip in Charlotte—Harris Teeter's international aisle stocks it reliably, but Food Lion and ALDI may force you to hunt. At roughly $1.20 per serving (ground beef and bulgur dominate the cost), this lands solidly in weeknight territory, especially for eight people. The stated 35 minutes is honest if you start with bulgur already soaked; otherwise add 15 minutes for hydration. These patties reheat beautifully and suit a family meal or meal-prep well, though they need close attention while pan-frying to avoid crumbling.
