Ingredients

2 slices Italian bread

1½ teaspoons mayonnaise

6 slices Cajun seasoned chicken breast

3 strips roasted red peppers

1 small pepperoncini pepper

1 slice American cheese

2 teaspoons Italian dressing

Directions

  1. Preheat your broiler to medium-high heat.

  2. Place both slices of Italian bread on a broiler-safe baking sheet or toaster oven tray.

  3. Spread ¾ teaspoon of mayonnaise evenly on the top surface of each bread slice.

  4. Arrange 3 slices of Cajun seasoned chicken breast on each slice of bread.

  5. Top each bread slice with the roasted red pepper strips and the small pepperoncini pepper, dividing evenly between the two slices.

  6. Place one slice of American cheese on top of each prepared sandwich.

  7. Broil for 3–4 minutes until the cheese melts completely and the bread edges begin to toast lightly.

  8. Remove the sandwiches from the broiler and drizzle 1 teaspoon of Italian dressing over each melt.

  9. Serve immediately while warm.
