1 tablespoon vegan margarine

1 teaspoon virgin coconut oil

2 large red onions, finely chopped

½ teaspoon sea salt

2 medium courgettes, sliced

1 large red bell pepper, diced

1 tablespoon fresh tarragon

8 medium asparagus spears

200 g firm tofu

1 tablespoon nutritional yeast

150 ml water

½ teaspoon agave nectar

1 tablespoon self-raising flour

2 teaspoons egg replacement powder

½ teaspoon sea salt

1 teaspoon black pepper

Directions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with a small amount of vegan margarine.

  2. Heat the 1 tablespoon vegan margarine and 1 teaspoon coconut oil in a large skillet over medium heat. Add the finely chopped red onions and 1/2 teaspoon sea salt. Sauté for 8–10 minutes, stirring occasionally, until the onions become soft and lightly caramelized.

  3. Add the sliced courgettes and diced red bell pepper to the skillet. Continue cooking for 5–6 minutes, stirring gently, until the vegetables begin to soften. Stir in the fresh tarragon and remove from heat.

  4. Arrange the sautéed vegetable mixture evenly in the prepared baking dish. Distribute the asparagus spears in a single layer on top of the vegetables.

  5. Prepare the tofu cream: crumble the firm tofu into a blender or food processor. Add the nutritional yeast, water, agave nectar, self-raising flour, egg replacement powder, 1/2 teaspoon sea salt, and black pepper. Blend until smooth and creamy, scraping down the sides as needed.

  6. Pour the tofu cream mixture evenly over the vegetables, spreading it gently to cover the surface.

  7. Bake in the preheated oven for 30–35 minutes, until the tofu cream is set, lightly golden on top, and a knife inserted into the center comes out clean.

  8. Remove from the oven and let rest for 5 minutes before serving. Divide into four equal portions and serve warm.
