Ingredients
1/2 cup unsalted butter, softened
1 cup packed brown sugar
2 large eggs
2 3/4 cups whole-wheat flour
1/2 cup ground almonds
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon ground anise seed
1 teaspoon ground nutmeg
1 teaspoon ground coriander
1 teaspoon ground cardamom
1/8 cup whole milk
Directions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a small bowl, combine the cinnamon, cloves, anise seed, nutmeg, coriander, and cardamom. Set the spice mixture aside.
In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
Beat in the eggs one at a time, mixing well after each addition until fully incorporated.
In a separate bowl, whisk together the whole-wheat flour, ground almonds, baking powder, and the reserved spice mixture.
Gently fold the flour mixture into the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Stir until just combined.
Drop rounded teaspoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
