Ingredients

1¼ cups Blanched almond flour

Sea salt

2 tablespoons Butter or palm shortening

1 tablespoon Maple syrup

½ teaspoon Vanilla extract

2 pounds Fresh peaches, peeled and sliced

Directions

  1. Preheat your oven to 350°F (175°C).

  2. Peel the fresh peaches and slice them into bite-sized pieces. Arrange the peach slices evenly in an 8×8-inch baking dish.

  3. In a food processor, combine the blanched almond flour with a pinch of sea salt. Pulse a few times to combine.

  4. Add the butter, maple syrup, and vanilla extract to the almond flour mixture. Pulse until the texture resembles coarse breadcrumbs with some small clumps remaining.

  5. Distribute the almond flour topping evenly over the peaches, pressing down gently to compact it slightly.

  6. Bake in the preheated oven for 35 to 45 minutes, until the topping is golden brown and the peach juices bubble around the edges.

  7. Remove from the oven and let cool for 10 to 15 minutes before serving.
